Resin and Greek wines are synonymous. Pine resin has been used
in Greek wine production since the time of the ancient Greeks. The theory is that
resin adds an improvement to the taste of the wine when added during fermentation.
People have gotten used to the taste and half of the wines produced in Greece
use resin.
Other wines to note are mavrodaphne, a sweet dark wine similar
to an Italian recioto and nemea. Until Greek wine producers adopt strict viticultural
and vinicultural practices, Greek wines will remain on the periphery of serious
wines.
